Let's cook! Cinnamon buns!!

Hello Lovelies!


It's been awhile since we've had a Let's Cook! post - A friend of mine really wanted some Cinabons and I offered to make her these - she said they taste just like the ones from the shop! So I thought I'd share with you how to make some tasty cinnamon buns. Perfect for morning coffee and super easy to make, you can make these in no time at all!


You will need

For the dough
  • 250ml milk
  • 2 medium eggs
  • 75g butter, melted
  • 650g white bread flour + some for dusting
  • 1 teaspoon salt
  • 100g caster sugar
  • 1 Standard pack of yeast

For the filling

  • 225g dark brown soft sugar
  • 2 1/2 tablespoons ground cinnamon
  • 75g butter, soft enough to spread

For the icing

  • 200g (7 oz) icing sugar
  • 1/2 teaspoon vanilla essence
  • 2-3 tablespoons Water


Place all of the dry dough ingredients in a bowl and mix together.


Create a well in the centre.


Heat the milk up till it’s just warm - it needs to be warm to activate the yeast and which will make the dough rise, I put mine in a bowl in the microwave for about 30-40 seconds. Pour this into the well in the centre.

Melt the butter - again I used to microwave for about 30 seconds. When melted pour this in
with the milk.


 Crack the eggs into a separate bowl or jug and whisk with a fork, add these to the liquids.


Here comes the messy bit! Stir everything with a wooden spoon until you have something that looks like the above. Next you need to dust your hands with flour (To stop the wet dough sticking so much) and knead the dough until everything is blended properly.


Once it’s been kneaded it should like this. If you’re finding the dough is still a bit wet, add a little flour and knead it in.
  

Cover the bowl with a warm damp cloth, and leave it somewhere warm to rise for an hour.


The dough should have roughly doubled in size in the hour. Remove the wet cloth.


Grease and line a baking tray (Lining the tray will help with clean up later!)
  

Flour your surface that you are going to roll onto and dust the rolling pin with flour to prevent the dough from sticking.
  

Measure out the brown sugar and cinnamon and mix together.


Take your dough and roll out into a large rectangle. If you find it’s difficult to roll out try stretching it out to rough the shape you want.


Spread the dough with the butter quite thickly right to the edges


Sprinkle the cinnamon and sugar mix over the butter and flatten out with your hands - press it into the dough carefully.
  

Roll up the dough into a long sausage, tucking it under as you go. I found that it worked best to seal the edge with a little water.
  

Mark out 12 slices and using a sharp knife cut them.


Place in rows in the tray with enough room for the dough to expand in between them. Allow the buns to sit for half an hour. Whilst the dough is resting, pre-heat your oven to 200c.


After half and hour and when the oven is heated pop the buns into the oven for roughly 25 minutes - keep an eye on them, they are done once they have turned a golden brown colour. Whilst the buns are cooking, place either a sheet of grease proof paper or tin foil underneath a cooling rack - this will stop  any drips from syrup or icing from going onto your counter top.

Remove the buns from the oven once done, carefully use a knife to roughly cut out where the edges are, turn out on to the wire rack and separate each.
  

Mix up the icing sugar with the water and vanilla essence - you want it to be fairly runny.


Turn the buns up the right way and drizzle with the icing.


And that’s it! These are best served when warm but would make a tasty treat either way!

Low calorie, low fat Rilakkuma cookies!

Hello Lovelies!

It's time for another Lets Cook! Today we're making Rilakkuma cookies that are super low calorie (it works out about 15 calories a cookie!)

You will need for 26 cookies:
  • 100g Self  raising flour + 3TBSP for rolling out
  • 26g Weight Watchers Dairy Spread
  • 1 TBSP Stevia (possibly more if you like very sweet cookies)
  • 1 TSP Vanilla Extract (Or any flavouring you'd like)
  • 1 TBSP Water (to bind)
  • 1 Cal cooking spray

  1. Rolling Pin
  2. Cookie cutters
  3. Baking Tray
  4. Pallet Knife (Optional)
  5. Bowl
  6. Spoon
  7. Scales



Pre-heat your oven to 180c (I have a fan over so you may need to counter for this. Give your baking sheet a good spray over the 1 cal spray to ensure that the cookies won't stick to it! Measure out your flour into a bowl


Add in the Stevia and stir to mix in


Add in the Dairy spread 


rub between your thumbs and fingers until it lumps together - If you have a pastry mixer (It looks like a half horse shoe, with a handle and several slatted blades, you can use this to save your fingers getting messy!)


Gradually add in some of the water and mix - you need enough to to cause the dough to stick together but not be super sticky


Dust your rolling board/counter top as well as your hands with some of the flour left over


Roll out your dough until its about 3mm thick and cut out your shapes

Transfer to thegreased baking sheet and pop into the oven for 10-15 minutes (Check them regularly to make sure they aren't over cooked, they should just be turning golden brown)


Remove from the oven and transfer to a wire rack to cool - Store these in an airtight container else you may find they go rather soggy!

And there you have it! Tasty cookies for not many calories - I may try making these again with cinnamon or nutmeg instead!

Let's Cook! Banana Bread - Low fat, Low Calorie!

 Hello Lovelies!

Today I've got a recipe for low fat healthy version of Banana bread! It comes in at around 140 calories a piece (Or less if you use smaller cases!) It's very simple to make and takes about 30-40 minutes to bake in the oven!


Ingredients

  • 200g Whole wheat flour
  • 300g Over ripe bananas
  • 119g eggs (roughly two medium eggs)
  • 1 TSP Stevia or other sweetener (Optional)
  • 1 TSP Cinnamon
  • 1/2 TSP Nutmeg (Optional)
  • 1 TSP Bicarbonate of Soda
  • Pinch of salt

Stuff

  • Large bowl
  • Wooden spoon
  • Fork
  • 8 cake cases or loaf tin
  • Oven - preheated to 200c or 190c if you are using a fan oven



Add your bananas to the bowl and mash them with the back of a fork until you have a lumpy goop!


Crack the eggs into the bowl and beat in to the banana mix. Add in the sweetener if you are using it and mix well.


Next add in the flour and stir in till you have a wet cakey mixture. It shouldn't be overly runny, if it is add a little more flour in.


Add in your spices, salt and bicarb and mix through.


Divide the batter evenly between your cake cases (If you're using hard cases like mine I suggest using a baking sheet underneath or if you are using paper cases using a cake pan)


Pop them into the oven for 30-40 minutes - I'd check on them around 30, if they look dark brown and are stiff to the touch they are done. You can try using the cocktail stick method but as there is banana in these you run the risk of mistaking banana for raw cake batter!


And there you go! All done! You now have some pretty tasty snacks for jsut 140 calories a pop! I hope you enjoy this recipe! Let me know your thoughts in the comment, or any suggestions you'd like to see me make!
